When exporting to ue4, the metallic and rougness are exported together. What channels belong to which?

If you are exporting from Substance painter with the Unreal Engine export preset, you can find the details by looking into the export preset setup : https://support.allegorithmic.com/documentation/display/SPDOC/Creating+export+presets
Don't forget your log file. It can be exported from the Help menu of the software.

Could you provide an unreal demo project and tutorial on the proper way to setup a mesh with a material created by substance painter imported into Unreal Engine so that it closely resembles the visual quality of that in substance painter?

And what about opacity? I can't find info on it on the tutorial and the example UE4project.

For opacity, the preset places the opacity channel in the Alpha of the base color. The example UE4 project doesn't use opacity. The usage would be to just use the alpha channel of the base color in the UE4 material graph. For the UE4 material, you need to set the Blend Mode to Translucent and this will give you the opacity input.
